Our Nicaraguan Segovia is cultivated organically on small shaded farms, which are inspected annually by the Organic Crop Improvement Association. The growers employ environmentally sustainable practices of composting, mulching, and abstaining from the use of petrochemicals. In the processing of this coffee, the beans are primarily sun dried on cement patios. With above average bean size and few defects, the coffee is classified as Strictly High Grown (SHG) meaning it grown above 1100 meters above sea level. Nicaraguan Segovia is the best certified organic Central American coffees that we have tasted this year.
