Our Celebes Kalossi (the country is now known as Sulawesi) comes to us from family owned farms organized around the Toraja Coffee Growers Cooperative. Farms are located in the Tana Toraja Regency of the South Sulawesi province on Sulawesi Island, Indonesia, a well regarded growing region. The Toraja people that grow coffee in this area are an indigenous group with a traditional village lifestyle that live and work along the slopes of the Sesean Mountain Ranges. The Toraja Coffee Growers Cooperative collaborates with an NGO called VECO and are dedicated to improving access to better agricultural practices and coffee farm infrastructure. The partnership has helped improve quality, increase earnings and is strengthening farmers livelihoods.

In this area coffee is grown at 1400 – 2000 meters in an andosol soil (containing material of volcanic origin). Previously farmers would process the coffee themselves but with the formation of the Cooperative the community can now bring their crop to the towns of Minanga or Sapan for processing. The coffee is processed in a wet hulled preparation or giling basah as it’s called locally. This entails some form of pulping, followed by a brief drying period to reduce moisture.  Coffee is then delivered to the mill where parchment is removed while still damp and then the coffee completes its drying as the raw green seed. This practice arose from Indonesia’s earliest days of cultivation under Dutch colonizers but did not become common on Sulawesi until the 1970’s. The method leaves its mark with the distinctive jade-like color of the bean.

A focused coffee with a delightful aroma. In the cup it is rich and full with nuances of spice, chocolate and burnt sugar as well as hints of berry and earthiness.
