Costa Rica La Pastora Tarrazu is sourced from the Cooperativa de Caficultores de Tarrazu R.L. (CoopeTarrazu).  CoopeTarrazu was founded 1960 and has over 3,200 members from the canton of Tarrazu in the province of San Jose, Costa Rica.  The co-op went through a transformation in 2004 which brought about five new guiding principles for the group: solidarity, transparancy, sustainability, quality and service.  CoopeTarrazu also operates an agriculture store and grocery store as part of their sustainable business model and they strive to serve the community through environmental protection initiatives and migrant worker support programs.  Members have access to healthcare and low interest loans as well.

Farms in the CoopeTarrazu grow coffee trees at 1300 – 1600 meters in the Talamanca Mountain region.  The soil is rich volcanic loam and farmers grow Caturra and Catuai varieties.  The beans are fully washed and dried in the sun.  This coffee has a flavorful aroma with notes of brown sugar, molasses, chocolate and jasmine.  The body is rich and juicy with nuances of milk chocolate, plum and melon.
