Guatemala Huehuetenango Finca La Severa

Our Guatemalan coffee comes from the premier growing region of Huehuetenango. From the Finca La Severa located in the municipality of Santa Cruz Barillas within the department of Huehuetenango Guatemala, this remote family-owned farm was established by Dr. Carlos Roberto Serrano Roa in 1969 and named after his mother Severa.  Over the last 3 decades Dr. Serrano and his family have developed the majority of the 135 acre estate for coffee cultivation.  The remaining acreage has been preserved with natural forest and pristine water that is used for processing the coffee.  The estate has its own mill for cherry selection, depulping, fermentation and drying and are meticulous with the entire process.  They treat the waste water from processing before returning it to the environment as well as converting the coffee pulp into organic fertilizer to use on the coffee plants.  Finca La Severa also takes great care to provide housing, healthcare, education and social activities for the workers as they feel these are essential to ensuring a dignified quality of life at the estate.

Coffee at the estate is grown at 1459 meters in a clay mineral soil.  The coffee is fully washed and dried in the sun for processing.  The aroma of this coffee has lovely notes of apple and peach with hints of chocolate.  With a smooth medium body in the cup you’ll find nuances of dark chocolate and candied nuts balanced by notes of green apple, peach and winey green grapes.
