Mexico Jaltenango Chiapas San Fernando Altura EP is sourced from family owned farms of the Sociedad de Produccion Rural Union de Ejidos y Comunidades San Fernando (S.P.R. de R.I.).  This organization operates in multiple municipalities within the state of Chiapas, Mexico.  S.P.R. de R.I. includes more than 1,300 farmers.  The organization has invested in nurseries to help farmers renovate their coffee farms as well as helping farmers make improvements to their homes.  They also use diversification initiatives to set up coffee shops and give training programs to help farmers create high quality compost.

Our Mexican coffee is grown at 1200 – 1400 meters in clay mineral soil.  Multiple varieties are grown including Bourbon, Catuai, Caturra, Mundo Novo and Typica.  Beans are fully washed and dried in the sun.  This coffee is certified Organic and Fair Trade.

Altura means height in Spanish and is used to describe high grown, or mountain grown, coffee.  The higher-grown the coffee, the better. This is due to the fact that Arabica coffee, the only species which encompasses specialty coffees, will only grow at a higher altitude. Coffee is classified by it’s relative density – the denser the finer. The higher-grown it is, the denser it is. Therefore, the higher-grown, the finer.

EP stands for European Prep and specifies that the raw beans are all hand sorted to remove any foreign material. European Prep coffees have less than 8 defective beans in 300 kg. and are larger in size.

Our Organic, Fair Trade Mexican is smooth and soft drinking.  A sweet aroma with notes of chocolate and hints of berries.  In the cup it’s smooth and creamy with nuances of milk chocolate, caramel and vanilla.
