Celebes Kalossi – Sulawesi – Toarco Jaya AA
We are pleased to offer *Celebes Kalossi – Sulawesi-* Toarco Jaya AA sourced from the Pedamaran Farm & PT Toarco Jaya Estate. The Toraja people, an indigenous group from the central mountain region of the southern part of Sulawesi Island, produce the coffee coming from PT Toarco Jaya Estate. Located in Bokin, Rantebua, North Toraja Regency of South Sulawesi, Indonesia the Pedamaran Farm has over 1,300 acres of land. Besides sourcing coffee from their own farm, PT Toarco Jaya, also sources coffee from trusted producers throughout the surrounding region.
Near the end of the 17th century coffee from Celebes starting to gain renown in Europe for its distinct flavor profile. In general coffees coming out of the Indonesian Archipelago are known for their full body, earthiness and lower acidity. While still having that wonderful full body, Celebes stands out with less earthy qualities, more pronounced acidity as well as distinct notes of spices. After WWII Toraja coffee plantations became widely abandoned and eventually thought lost altogether. In the early 1970’s Key Coffee came to Sulawesi to see if the famed Celebes coffee could be found again. While the estates looked empty of any crops it was found that the locals were still growing small amounts of coffee saving it from total extinction. In 1976 PT Toarco Jaya Estate (a joint Japanese and Indonesian coffee venture) was established by Key Coffee and from the beginning the indigenous peoples were invited to plant and take part in bringing Celebes back to the world market. PT Toarco Jaya (toarco is an abbreviation of toraja arabica coffee) has a long history of contributing to the region’s economic development and social improvement by building roads, schools and processing stations as a means to improve quality of life.
They follow strict quality control procedures from picking the cherries all the way through tasting the final result. This crop was grown at 1,400 to 2,000 meters in volcanic loam soil. The cherries are processed fully washed after depulping and fermenting and then dried in the sun (PT Toarco Jaya is one of just a few Indonesian producers that uses a fully washed process). The coffee has a rich aroma with nuances of burnt sugar, dates, dark chocolate and spices. Well balanced with a full, rich body in the cup. Notes of dark chocolate, molasses, brown spice and fine subtle acidity of citrus and berry. A unique cup!
∗The name Celebes was originally given to the country by Portuguese explorers. Sulawesi came in to common use following Indonesian Independence from the Dutch/Netherlands in 1945 and is now the proper country name. Kalossi is a specific village in the main growing region of Sulawesi.
