Our current Colombia coffee is a community blend sourced from a group of 64 producers organized around Terra Coffee SAS. This community of growers is located around multiple municipalities of the Huila region.
Family owned farms are the backbone of Colombian coffee production. Farms in an area will band together to create a crop, then with the help of an export company they can get their coffees to a larger market. This model of collaboration between the farmers produces traceable community blends with vibrant regional profiles. Terra Coffee helps each producer to improve organic farm management, as well as post harvest practices that best fit their farm, but in a harmonious way between all the farms so they are able to achieve a clean, consistent blend that still has complexity from flavor variations of each farm.
After careful harvesting, each producer macerates their cherries for up to 72 hours, next cherries are depulped and fermented for up to 120 hours. Then the beans are fully washed and gently dried on raised beds. The group works with Mastercol export company to help with final stages before international export such as warehousing and milling. The assistance of Terra Coffee and Mastercol really helps to increase income for everyone, allowing producers to reinvest in their farms and strengthen family livelihoods.
Pleasant aroma with nuances of cocoa, vanilla, caramel, and cinnamon. Good medium body in the cup with notes of vanilla and caramel coming through, along with dark chocolate, pear, red grape, and apple. Certified Organic.
