Our Special Offering from El Salvador is sourced from an operation called JASAL, located near the city of Apaneca, department of Ahuachapán, El Salvador. JASAL is a family owned and operated business, started by Jose Antonio Salaverria and his sons, Andres and Jose jr. According to legend, Jose sr. was offered a house from his father but he requested a farm instead. Andres and Jose jr. are the 6th generation of coffee producers in the family. JASAL produces on multiple farms, one acquired over 100 years ago and some as recently as the 2000’s.
This crop comes from Cerro Las Ranas, “the hill of frogs“, named for the farm’s lagoon which is populated by thousands of frogs. This region on the western side of El Salvador is considered one of the best growing areas in country. Elevations on the farm reach from 1,450 to 1,780 masl, which is about the highest elevations coffee can grow there. Soil is a nice volcanic loam as this area is amidst the Santa Ana stratovolcano. The Salaverria family is very conscientious about the handling of their coffee, from overall farm management, the initial picking, throughout processing, to the final product. Environmental sustainability is also very important to JASAL, demonstrated through various procedures on their farms. This crop was processed in the pulp natural or “Honey” style. Once the coffee is pulped (coffee cherry skin removed), the mucilage covered beans are taken straight to clay patios and turned frequently to evenly dry before final processing and export.
JASAL also owns their own mill, Beneficio Las Cruces, where they give just as much attention to detail in preparing the coffee for export. In addition to the care they put in to the coffee, they put just as much care in to their workers and the community. A good work environment along with things like housing, work safety education, health care, and better salaries help improve workers lives. They have donated financing and land toward multiple medical clinics, as well as land for a school. Helping and supporting the community has been a long standing tenet of the Salaverria family.
Pleasant aroma with hints of chocolate, sweet fruits, and caramel. Medium body; smooth, syrupy, and a bit rich. Nuances of caramel, sweet berries, soft cherry and pear, red apple, and hints of dark chocolate and butter cookie. Delicious!
