Our Guatemala Huehuetenango Palhu is produced by Maximiliano Palacios (Max), who owns and operates Finca La Providencia. Max is a third generation farmer. La Providencia is located in the municipality of San Pedro Necta, in the department of Huehuetenango. This rocky mountain zone boasts the highest altitudes and driest soils of the country along with cold winds from the Cuchumatanes Mountains and warm winds from the Tehuantepec region make this one of Guatemala’s premier coffee growing regions.

Max’s La Providencia is a 600 acre estate sitting at 1,550 masl. The soil in the area is made of clay minerals. The coffee is depulped and fermented, then fully washed, and dried on sun patios and with mechanical dryers. The crown of La Providencia is it’s mill. Sitting at a highpoint of the sloping farm, the mill is well designed and well taken care of. Gravity, water, and a series of intricate canals are used to send ripe cherries through the depulping process and down to the drying patios. Max calls his coffee Palhu, which is a combination of the family name Palacios and the Hueheutenango department.

Pleasant aroma of vanilla, berries, and brown sugar. Smooth, buttery medium body. Nuances of milk and dark chocolate, almonds, and hints of cherry and apple. Nicely balanced cup!
