Timor-Leste Ermera Letefoho Eratoi
The mountainous regions of Timor-Leste (also known as East Timor) are covered in rain clouds and mists. This climate provides excellent coffee growing conditions and sparkling water that is used to wash the freshly harvested coffee beans. Organic coffee from Timor is cultivated with no chemical herbicides or pesticides. Our Certified Organic Timor exhibits the richness of Indonesian coffee and has a refined, elegant flavor.
This crop of Timor is sourced from 12 family-owned farms organized around Cafe Brisa Serena (CBS). CBS operates in the Letefoho sub-district of the Ermera municipality, Timor-Leste. The organization was founded in 2010 with an association of more than 400 small producers and has helped producers to achieve multiple improvements including organic certifications, best farm management practices, quality control training, increased specialty coffee premiums as well as improvements to processing infrastructure, including drying structures that have greatly improved producers ability to consistently meet quality standards for moisture content and water activity.
This Timor is grown in clay mineral soil at 1,812 meters and processed fully washed with drying done on raised beds. Sweet aroma with nuances of berries, dark chocolate, brown sugar and vanilla. Good and balanced composition in the cup with notes of chocolate, figs and berries, toffee, earthiness and citrus. Smooth, rich body.
