Our importer offers some insight into this name:
“As expected, there are various stories about how this peculiar name came about. One explanation bandied about refers to the natural fertilizer. Another version recounts how one farmer wanted to keep his special find to himself and gave the cultivar an unappetizing name to discourage neighbors from coming upon his discovery. The trees grow in soil so named, “ya shi,” that is rich in white chalk and yellow loam. Even though this has no relation to duck droppings, it is another layer in the folklore. The leaves of this Oolong are similar to a common plant we know, Schefflera, and the latter is known as “duck feet” plant in the area. So that name has carried over to the tea as well.”

This is a Dan Cong Oolong, grown from a single tea tree in the Phoenix Mountains in the Guangdong Province in China.

Sweet and buttery with notes of peach, honeysuckle, hibiscus, and toasted spices.

Recommendations: Use 1 gram of leaves per 1 ounce of water in a or gaiwan or small covered vessel; heat fresh water to about 195ºF; steep for 60 seconds. Add 30 seconds per extra steeping. Good for several infusions.
