Our Guatemala Antigua Bella Carmona is sourced from Luis Pedro Zelaya in the Antigua Growing Region, department of Sacatepéquez, Guatemala. Luis Pedro is well versed in all things coffee and has a outstanding professional reputation. Between four generations of Guatemalan coffee culture and his Agribusiness degree from renowned University of Zamorano, Luis has the knowledge and ability to produce world class coffees through precise farm management and post-harvest processing decisions.
The Antigua Region is a Protected Designation of Origin (PDO) due to the area’s renowned coffee reputation. The rich volcanic soil and cool weather, along with the areas location create a perfect micro-climate for coffee growing. At the Zelaya’s family farm, Hacienda Carmona, plant nutrition, pruning and pest management are exceptional, resulting in a selection of exquisite coffee cherries. At Bella Vista, where the wet and dry-mill are located, Luis Pedro and his team meticulously process fully traceable lots by harvest date, location, variety and altitude. Bella Vista’s dry-mill was specifically designed for sorting high quality micro-lots.
Coffees from Bella Carmona are grown at 1,500 to 1,650 meters above sea level in a volcanic loam. Cherries are depulped, fermented and washed in a very traditional way perfected over the last 100 years. Then the coffee is gradually dried in a controlled environment designed to protect cup quality. Raised drying beds and sensor controlled airflow permit a more uniform drying process and protection from the rain. Also it’s an additional opportunity for hand sorting parchment as it dries. The same focus on sorting and quality control is executed through to the final export stage.
Pleasing aroma with notes of cocoa, stone fruits, caramel and a hint of spice. Good structure and balance in the cup. Smooth and lush medium body. Nuances of cocoa, pastry and nuts along with sweet peach and caramel.
