Papua New Guinea Timuza

Description

Our Papua New Guinea Timuza is sourced from small-holder farmers of the Kamano tribal group located in the Eastern Highlands province of Papua New Guinea. The Timuza Coffee Cooperative represents this group of over 200 farmers who are all located in the hamlets around Namura town, southwest of Kainantu.

Timuza Coffee Cooperative farmers receive training and assistance in various areas of business; financial management, coffee husbandry, processing standards, and gender equality. The average farm size for producers in the cooperative is just under 3.5 acres (1.4 hectares) at altitudes of 1,420 to 1,600 masl. Most have an adjoining garden for food cultivation. Soil in the area is a mix of black and brownish red loam and coffee trees are shaded by casuarina and albizia trees. During the harvest, only the ripe cherries are picked. Next comes manual pulping, fermentation in traditional Bilum* bags, washing, and lastly drying in the sun.

Pleasing aroma with nuances of dark chocolate and pastry with hints of stone fruit. In the cup, notes of dark chocolate, pastry, a hint of spices, and subtle cherry. Good body, full, creamy, and rich. Certified Organic.

*Bilum bags are very important culturally to the Kamano. Traditionally they are hand woven by women using techniques passed down through generations and made with all natural fibers and dyes. The fiber making process can be long as the threads are created from the barks of indigenous trees. They are used proudly by everyone in the family.
