Pu’er Mini Cakes

Description

Shou or “Cooked” Pu’er tea pressed into mini cakes. Very hefty, full bodied tea with earthy notes of fine tobacco, malt, and mushroom balanced by hints of citrus zest and brown sugar.

Pu’er tea is from the Yunnan Province in China, and is either fermented naturally over time (“Sheng”, “Aged”, or “Raw”), or fermented more quickly by “cooking” or taking the leaves through a secondary process, which is very similar to composting (“Shou” or “cooked”).  Both of these processes result in microbial communities, giving the tea probiotic effects.

Recommendations: Use 1/4 tea cake (or 2 grams) per 6 oz. cup; heat fresh water to a rolling boil; Rinse or “wash” leaves with boiling water for 5-10 seconds to remove natural impurities. Steep for 3 minutes.

Alternatively, for a cleaner, more refined flavor: Use 1/4 tea cake (or 2 grams) per 6 oz. cup; heat fresh water to a rolling boil; Rinse or “wash” leaves with boiling water for 5-10 seconds to remove natural impurities. Steep for 30-45 seconds. Good for 5-8 steepings, adding 30 seconds to steep time each time.
